Easy. Peasy. Yummy.

Just before Christmas, my younger sister hosted a sibling dinner, and I chose to be the chef. I love to cook. For me, it’s all about flavors and textures that compliment and balance  each other.  My husband – totally appreciates it. My children? Well, 1 of the 3 likes foods such as asparagus, or mushrooms, or smoked salmon chowder.

Between home school, teaching, running a business, being a wife and mom, I get a little busy.  So I keep a couple of flavorful, easy recipes in my back pocket for those crazy late afternoons, so we don’t have to go out for dinner. One of my favorites is called Shrimp Scorpio. When a friend first gave it to me, it looked sooo simple, I thought it wouldn’t have lots of flavor. Wrong!

Shrimp Scorpio

  • ¼ cup olive oil
  • 2 cups chopped onion (I use sweet onions like Walla Walla)
  • 1 minced clove of garlic (Trader Joes’ has awesome frozen prepared garlic and herbs in 1 tsp increments.)
  • ¼ chopped fresh parsley
  • 1 15 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 lb small cooked shrimp
  • 1 cup crumbled feta (I actually use soft goat cheese, as I like the flavor better)
  • Cooked angel hair pasta
  • Sauté the onion in the olive oil.
    Add the garlic, parsley tomatoes and tomato sauce.
    Simmer 30 minutes.
    Stir in the shrimp and cheese, and heat through.
    Serve over angel hair pasta with a salad or veggie.
